- Repeat the procedure with boiling two more times.
- 5 minutes before the end of the last cooking, add citric acid.
- Put cooked jam in banks and roll up. Full readiness can be determined by appearance: watermelon pieces should become like jelly, and the syrup thicken and take a caramel hue.

- Add gelatin to strained syrup and leave to swell.
