World chocolate consumption is far ahead of cocoa bean production growth. Large chocolate companies are forecasting a chocolate deficit of 4 million tons by 2030; moreover, industrialists are worried that, while maintaining the current pace of chocolate production, cocoa beans will completely disappear by 2050.
According to the International Cocoa Organization, over the past decade, between 30 and 40% of cocoa production has been lost due to diseases and pests in the world. Also, all the more frequent weather disasters in the form of floods, hurricanes, droughts that provoke diseases of cocoa trees should be added to this.
Manufacturers see a way out of this difficult situation in the production of genetically modified cocoa raw materials. Industrialists advocate for a wide awareness campaign among chocolate consumers about the complete safety of genetic improvements, and that such changes in no way affect the taste of the final product.
Culinary specialists adhere to a different point of view. In particular, the author of several culinary books, Mark Shatsker, claims that chocolate is facing a loss of taste because of its desire to satisfy growing demand.
